Basic engine info

I know there are peeps here that rebuild engines all the time and hopefully one of you can show me where to read about building engines, mostly want to find out stuff like what effects how quickly the car revs (throttle response is it?) and how you should do things different when you want better acceleration instead of high speed and when buying specilized items such as alloy pulleys etc what effect they have. Info on cvh and zetec engines preferred but obviously the basics are gonna be the same ie. putting in lighter blargh blargh will increase throttle response etc. Thanks for any links, tips advices etc
