is it a good idea to have a hydrolic clutch or to retain the old cable one.

The old fashioned cable one does most people just fine. Helix, Alcon and AP do clutches that should cope with whatever you can throw at them.

hydraulic is overkill for most applications although the rachet mechanism on fords is none too clever
