Ecu - any Marelli cossy ecu will do, the later ones are better but are more expensive.
Loom - 2wd is best as it's self contained (and only needs about five connections other than those to the engine), the 4wd is part of the car's main loom. The ecu connector isn't compatible with the eec-iv connector. (I have a 2wd one which was kept as a spare for a rally car and has hardly been used, pm me if you are interested)
Chip - Special required to suit the ZVH, try someone like MSD.

Try this site for more information http://www.zetec-turbo.co.uk/
Your set up will differ from theirs because I think the TPS for the 2wd Sapphire ecu you are using goes the same way as the Zetec throttle sensor (a quick check with the multimeter should confirm this) and therefore you should be able to use the Cosworth sensor.

id just like to say that buy the time you have spent all that time and effort getting and fitting and adapting the cossie management you could quite easily get aftermarket ecu which is of equal or better cappability
same goes for the ZT Vs ZVH arguement too in my view
