I was just wondering if anyone could tell me if I could get a hi-spec dial wit rev counter, and the journey mileage counter thing, and fit it in my fiesta (which has the low spec dial panel) Can it all be wired up so it all works?

Yes, it screws straight in. IF it's a Mk3.5 (it'll have the teardrop shaped mirrors, hinged flap over the fuel cap, etc) the rev counter signal wire already be there. Everything else will work fine in the meantime.
