Don't put the G-Max crap on for a start. If you're on a budget the Spax fixed rate damper and spring kit is what you need. It's what I'm using on my S2 track car and although not as good as Koni top adjustables it copes with the 250 raging ponies and even though the kit is knocking on in years it's still taking all the abuse I throw at it.
Also worth polybushing the suspension compnents and adding the beefier anti roll bar from an S2 as well
Drop the car no more than 35mm or the handling will suffer as a result.

You can do loads to the Escort to make it handle well
Coilovers from Gaz
Zoo or MEF Adjustable TCA
Zoo front link kit
Zoo rear link kit ( only if you have coilovers )
Polly bust or rose joints if your hardcore
Strut braces front and rear
Roll cage

Coilovers are a bit of a bind as the rear turrets need modding before you can fit them.
MEF adjustable TCA's are excellent bits of kit, mate has them on his S1 track toy.

Tim Butcher has GAZ coilovers on his 320bhp Escort and turrets haven't been touched.
