fan wiring?
Motor: 12v 80w
how do you find out if the 2 motors will draw to much power? can these be used on a fiesta mk3 and if so is it simply plug and play or is there other things to consider?

Two tens don't fit a standard rad and also you got to take into consideration the slam panel brace which gets in the way. Depends how much potching your prepared to do really

80w / 12v = 6.7A
That's about 13.5A draw for two. However, does the 80w refer to continuous running or max draw ? The fans may only draw 6.7A each while running, but when they start up may draw considerably more as the motor overcomes inertia and gets to speed.
Personally would fuse and relay the fans independently, easy to do an only requires a modicum of electrical knowledge. For two fans use two relays and two fuses, but connect pin 85 on each relay together so they are both toggled by the thermostatic switch at the same time.

I'd use a timed delay relay on the second one to kick in the second fan maybe 10 seconds later. Saves straining the wiring system and electrical gubbins, plus any heating/cooling issues wouldn't be affected by a mere 10 second delay for the second fan. If it causes an issue, the problem would be elsewhere of course.

I'd thought this before tbh but since both fans are independently switched and you're using a bespoke loom, the electrical impact should be minimal; moreover with both fans running you'll be increasing the effectiveness of the cooling twofold (in terms of airflow).
As far as I can see, so long as your alternator is capable of supplying sufficient current then it should not be an issue.
