Ya'right
There are loads and loads of Mk3 Fiestas (the most common sort you see around) and with the exception of performance models like the XR2i, FRST, RS1800i and Si 16v (shut it you lot ), all can be picked up for easily less than £2,000.
£1,500ish will get you a clean M plater (newest of the Mk3 shape). If you go for LX you get a rear wash wipe and other basic creature comforts, or if you go for a Ghia, you get electric windows, central locking, etc.
If you need any more help, let me know.
PS What Uni are you wanting to go to? I have a Fiesta too, perhaps we can share rides

£2000 would get you an m reg 1.4 si if you look hard enough, they come in metalic black, burgendy, several greeny blues and a nice light metalic blue. All si's have power steering as well which my misses found very hard to do without on her 1.1 fiesta.
Happy hunting
