gas is more stable as it cannot be altered in state under temperature and offers greater consistancy and performance. the only downside with gas dampers is that if for any reason they fail (due to age wear etc) the gas will escape leaving little to no damping effect, where as with oil the loss of the damping medium will not be as immediate, unless you actually manage to cause severe damage to the damper body (been there done that not good lol) but oil under pressure(therefore temperature) thins out producing loss of damping effect, can foam or froth, or turn to a vapour like state where it is no longer effective as a damping medium as in this state it can be compressed easily (where as with gas dampers the gas is pressurised so doesn't suffer from this problem) yet again causing loss of damping effect under pressure/extended hard driving. hope this makes sense and helps....
